Creamy Cheesy 🧀 Green Pea Soup with Crunchy Pea Croutons – Tastes Glorious!

A comforting classic, this green pea soup combines tender peas with rich cheddar cheese in a creamy base.

🥣 For the Green Pea Soup

Ingredients:

  • 1 tbsp butter
  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 spring onions, sliced (white and light green parts only)
  • 3 cups frozen peas
  • 3 cups vegetable stock
  • ¼ cup raw cashews (soaked in hot water for 10 minutes, then drained)
  • ½ cup grated mature cheddar cheese
  • ¼ cup grated Parmesan
  • ¼ cup heavy cream (optional but glorious)
  • Salt and pepper, to taste

Instructions:

  1. In a medium saucepan, heat butter and olive oil over medium heat.
  2. Sauté chopped onion and garlic until soft and fragrant (3–4 minutes).
  3. Add sliced spring onions and cook for another 2–3 minutes until tender.
  4. Stir in the peas and pour in the vegetable stock. Simmer gently for 5 minutes.
  5. Transfer everything to a blender. Add the soaked cashews, cheddar, Parmesan, and cream. Blend until silky smooth.
  6. Taste and season with salt and pepper. Return to the pan to warm through if needed.

🟢 For the Crunchy Pea Croutons

Ingredients:

  • 1 cup frozen peas (thawed and patted dry)
  • 1 tbsp olive oil
  • 1 tbsp grated Parmesan
  • ½ tsp garlic powder
  • Salt & pepper, to taste

Instructions:

  1. Preheat oven or airfryer to 200°C (400°F).
  2. In a bowl, toss peas with oil, Parmesan, garlic powder, salt, and pepper.
  3. Spread on a lined baking tray and roast for 10–15 minutes, shaking once or twice, until golden and crispy.

🍽️ To Serve

Ladle soup into bowls, top with crunchy pea croutons, and a little extra cheddar or Parmesan for that irresistible cheese pull. Serve with toasted sourdough, garlic bread, or enjoy solo—either way, it’s a hug in a bowl.
