A comforting classic, this green pea soup combines tender peas with rich cheddar cheese in a creamy base.
🥣 For the Green Pea Soup
Ingredients:
- 1 tbsp butter
- 1 tbsp olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 spring onions, sliced (white and light green parts only)
- 3 cups frozen peas
- 3 cups vegetable stock
- ¼ cup raw cashews (soaked in hot water for 10 minutes, then drained)
- ½ cup grated mature cheddar cheese
- ¼ cup grated Parmesan
- ¼ cup heavy cream (optional but glorious)
- Salt and pepper, to taste
Instructions:
- In a medium saucepan, heat butter and olive oil over medium heat.
- Sauté chopped onion and garlic until soft and fragrant (3–4 minutes).
- Add sliced spring onions and cook for another 2–3 minutes until tender.
- Stir in the peas and pour in the vegetable stock. Simmer gently for 5 minutes.
- Transfer everything to a blender. Add the soaked cashews, cheddar, Parmesan, and cream. Blend until silky smooth.
- Taste and season with salt and pepper. Return to the pan to warm through if needed.
🟢 For the Crunchy Pea Croutons
Ingredients:
- 1 cup frozen peas (thawed and patted dry)
- 1 tbsp olive oil
- 1 tbsp grated Parmesan
- ½ tsp garlic powder
- Salt & pepper, to taste
Instructions:
- Preheat oven or airfryer to 200°C (400°F).
- In a bowl, toss peas with oil, Parmesan, garlic powder, salt, and pepper.
- Spread on a lined baking tray and roast for 10–15 minutes, shaking once or twice, until golden and crispy.
