Fried Onions
- 3 large onions, thinly sliced
- Enough oil for frying
Chicken Marinade
- 1 kg boneless, skinless chicken thighs (or any chicken pieces you like)
- 1 tsp garlic powder
- 1 tbsp fresh ground ginger (or about a 1½-inch piece, grated)
- 1 tsp turmeric powder
- 1 tsp kosher salt (add more to taste)
- 1 tsp cumin powder
- 1 tsp paprika powder
- 1 tbsp biryani masala
- 1 tsp all-purpose seasoning
- ½ cup natural unsweetened yoghurt
How to Make Biryani Chicken
1. Fry the onions
Slice your onions thinly and fry them in enough oil until golden brown. Stir often so they don’t burn. When they are ready, take them out and set them aside. Keep about 3 tablespoons of the onion oil for later. It adds extra flavour to the chicken.
2. Marinate the chicken
In a large bowl, add your chicken and all the spices: garlic powder, fresh ground ginger, turmeric, salt, cumin, paprika, biryani masala, all-purpose seasoning, and yoghurt. Mix everything well so the chicken is fully coated.
Cover the bowl and put it in the fridge for at least 30 minutes. If you have more time, let it sit longer. The yoghurt and ginger help make the chicken soft and full of flavour.
3. Cook the chicken
In a large pot, add the 3 tablespoons of onion oil you saved earlier. Add the marinated chicken and cook it over medium heat. Stir often so it does not stick to the bottom.
Let it simmer for about 20 minutes until the oil starts to separate and the chicken is cooked through. The sauce should be thick and rich, and the chicken should be soft and juicy.
4. Serve and enjoy
Serve your chicken biryani with hot basmati rice, naan, or paratha. You can also add a side of cucumber or kachumbari salad.
