🥒 Zingy Crunchy Asian-Style Cucumber Salad

Fresh, crunchy, spicy, and oh-so-satisfying — this cucumber salad is your new go-to for a light lunch or punchy side dish!

Serves 2 | Ready in 10 mins

đź›’ You’ll Need:

  • 1 large cucumber, thinly sliced into strips
  • 2 tbsp crushed almonds (for the crunch!)
  • 2 tbsp linseed (hello, fibre!) — or swap with sesame seeds if you’re not into the slippery vibe
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 clove garlic, thinly sliced
  • 1 tsp honey
  • ½ tbsp chilli flakes (adjust the heat to your mood)
  • A pinch of salt

🔥 Let’s Get Tossing:

  1. Throw your cucumber strips into a salad bowl.
  2. Add crushed almonds and linseed (or sesame seeds if you’re feeling fancy).
  3. In a small heat-safe bowl, mix garlic, chilli flakes, salt, lemon juice, and honey.
  4. Heat olive oil in a tiny saucepan — once it’s hot (but not smoking!), pour it over the spicy mix.
  5. Pour this sizzling goodness over your cucumber and give it a good toss.
  6. Serve immediately and enjoy solo or as a zingy side!

đź’ˇ Pro Tip: Tastes even better after chilling for 10 minutes — if you can wait that long!

Enjoy when you try it!
